Lori, I, too, am a chef. 37 years - that makes me an old chef. Wilmington has hundreds of restaurants, but I can only count a few that are worth spending time at. I do like most of your choices, especially Mark's on Market.

As far as why restaurants don't stand up to our standards is lack of imagination and food cost. Plus most people don't know good food. The best food happens in the chefs kitchen.
